A Banh Mi is a Vietnamese style hoagie. It is a great example of how the French culture has fused with Vietnamese cuisine, using the a baguette as the base for of all these traditionally Asian flavors. In Vietnam, they are traditional street food- often sold on food carts, each made to order. Banh Mi is served with pickled carrots or daikon, very thin rondelles of jalapeno, fresh cilantro and cucumbers. The filling can be made with meat or vegetarian ingredients. I chose to make this version with spicy Asian beef jerky, which coincidentally is also the meat I used as a topping for the Beef Ramen recipe. When choosing a bread, pick one that isn’t as crusty as a traditional baguette. Hollow out the meat of the bread to make room for the Banh Mi ingredients. Some recipes even call for pâté spreads to bring some moisture into the sandwich, but I like mine with just a little mayonnaise to keep the sandwich from being too dry.

Spicy Beef Jerky

makes 8 servings

Ingredients:

2 cups of light soy sauce, divided for use

2 large shallots, peeled and halved

2 lbs top round beef

4 tbsp honey

1 1/4 tbsp roasted chile paste

1 1/4 tbsp fish sauce

3 tsp minced garlic, divided for use

1 tsp red pepper flakes

1 tsp minced Thai chili

Canola Oil for cooking

Procedure:

  1. In a large pot, combine 1 1/2 cups of soy sauce with 1 quart of water with beef and shallots
  2. Bring pot to a boil then lower to a simmer; simmer for 1 hour
  3. In a separate bowl, combine remaining soy sauce, 1 cup water, honey, chili paste, fish sauce, 1 1/2 tsp of garlic, red pepper flakes and minced Thai chili and stir to combine
  4. Once beef is done, cut thin slices and add to cooking soy sauce mixture, coating each piece of meat
  5. In a large saute pan, heat canola oil over medium heat and add 1 1/2 tsp of garlic until just barely golden
  6. Toss in the meat and soy sauce marinade and let cook over medium-low heat until liquid has reduced
  7. Serve warm on soups, as sandwich fillings or with a salad
  8. Enjoy!

 

Banh Mi

Ingredients:

Soft Baguette

Pickled Carrots

Jalapeno

Cucumber

Cilantro

Mayonnaise

Maggi Seasoning Sauce

Meat/ Vegetarian topping of choice

Procedure:

  1. Slice baguette in half and hollow out the inside
  2. Spread mayonnaise on both sides of the bread
  3. Layer in the ingredients- meat, cucumber, pickled carrots, jalapenos and cilantro
  4. Finish with a dash of Maggi seasoning sauce
  5. Enjoy!

 

Pickled Carrots

makes 4 servings

Ingredients:

1/2 c of carrots, peeled and julienned

1/4 c white vinegar

1/4 c salt

pinch of salt

Procedure:

  1. Combine all ingredients in a small bowl or Tupperware
  2. Seal the container and place in fridge for 20 minutes to 1 week
  3. Enjoy with the sandwich or serve as a garnish for rich, fatty foods!
